Layered Greek Lamb Dip

We can't let beef have all the fun, why not spice up your party with this tasty Lamb Dip?

* Recipe adapted from American Lamb Board- Four Layer Greek Lamb Dip*




Ingredients:

  • 1 pounds Graze The Prairie ground lamb

  • 1 Tablespoons olive oil

  • 1 teaspoons ground coriander

  • 1 teaspoon chili powder

  • 1 teaspoon ground cumin

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper, divided

  • 1 1/2 cups Greek yogurt

  • 1/4 cup chopped fresh mint

  • 1 clove garlic, finely chopped or pressed

  • 1 pint small tomatoes, halved or quartered depending on size

  • 1 English cucumber, diced

  • 1/4 cup Kalamata Olives, halved (optional)

Directions:

  1. In large skillet, heat oil over medium heat. Add lamb and cook until lamb is almost done. 8-10 minutes. When lamb is almost done add 1/4 teaspoon of the pepper and the rest of the spices. Stir and continue cooking until lamb is cooked through. Let cool for about 10 minutes.

  2. In medium bowl, stir together yogurt, garlic, mint and remaining 1/4 teaspoon pepper.

  3. In the bottom of large pie plate or similar size pan spread lamb evenly. Spread yogurt mixture over lamb mixture. Top with tomatoes, cucumber and olives (if using). Serve with pita chips, pita bread or Naan bread.
